I make myself an almond+cashew milk latte every morning. The nut milk I use foams "okay" but not amazing. I know there's some barista blends out there, but they're harder to find and more expensive and mostly I just can't be bothered.

BUT! I have made a discovery which changes everything!

The other day, in my uncaffeinated haze, I accidentally pulled my espresso shots into the metal frothing jug. After noticing my error, I poured the shots into my mug where they belong and then I put the nut milk in the jug without rinsing out the espresso residue. The resulting nut milk with a hint of espresso in it foamed *great*. Total game changer.

Hopefully this helps some of my fellow lactose-avoidant fellow coffee drinkers out there.

I'm a huge fan of the tomatoes based Manhattan clam chowder. I'm lactose intolerant so tend to avoid creamy soups - not a fan of the more popular New England cream based clam chowder. I've only found one place in #VictoriaBC that offers it on their menu, White Spot. Finest At Sea used to sell it too but now only sell the NE style, which I can't eat without feeling sick.

I made this recipe last night, and it came out perfectly. I haven't run across many recipes that didn't need to be adjusted in some way, so this one is exceptional. Made "mild" by our standards for the kiddos.

Basmati rice and naan. Ten servings for $40. Normally, this is a $15-18 plate in a middle of the road restaurant.

I'm trying out a new recipe. I'll let you know how it pans out for me. My issues with milk seem to be with the biology that comes along with it. I eat this dish in the restaurant and it hasn't killed me. I also think that the longer you stew/brew/simmer the sauce, the better for me. Breaks down the lactose and kills any other biology that came with the yoghurt and cream.

I cooked this pasta with lamb ragù dish from a recipe recommended yesterday by @xvf17@sfba.social and what can I say, yet another good meal was enjoyed in this house. 😋 All the different tastes (fennel, mint, harissa, lamb mince, etc.) worked really well together and there was a nice kick to it.

It didn’t take me quite as long as advised in the recipe (2 hrs 15 mins) but I only made half the amount and didn’t have to wait for that much liquid to evaporate, so everything was done after 90 minutes. It was really worth every minute. 👌🏻

As pasta I used a type of Rigatone as that works really well with ragù, and I like this one despite being wholemeal.

Yesterday there was a juicy pork neck steak with potato mash and caramelised onions made by my husband. I had planned to have green beans with this but a last minute change of heart resulted in a mixed salad with three different dressings. The reason for this was that I had found radishes with healthy looking leaves and I wanted to see what they taste like. They were absolutely fine (I should have used more) and the different kinds of dressings (with the last of the chopped nuts from the other day) were appreciated too:
🥗 mayonnaise with a special spicy soy sauce that contains habanero pepper
🥗 walnut oil with apple cider vinegar, garlic granules, pepper & salt
🥗 olive oil, apple cider vinegar, red bell pepper flakes, garlic granules, pepper & salt
The mayonnaise one ended up being the most popular one but they were all fine really.
The three cucumber pieces at the side had been marinated for three days in yogurt mixed with miso; it made them taste only a little bit different from normal.

I was craving mac and cheese but I have a rough relationship with dairy so I thought I'd try making a fake cheese sauce. It turned out great! I won't claim it tastes like cheese since it's been a long time since I last had dairy but it is cheese adjacent. Rich, creamy and brightly colored. Just the thing to go on noodles. #cooking #food #lactoseintolerant

I had been craving these savoury Indian chickpea flour pancakes for a while and today was finally the day I decided I had enough time. I like to eat them with roasted potatoes in an Indian style marinade and those always take quite some time. Just add some ketchup, chutneys, pickles and yogurt, perfect! So, so good!

Since we have moved, I’m struggling a bit with my food photos on our new wooden table (which I love). They just don’t pop as much as on a dark surface and I have to push around sliders to make them look warmer and more appetising. None of that is normally necessary with the dark background ones (apart from using the magic wand feature). And I still think the first photo (which was taken on our dark worktop) looks better. The problem is that the worktop is usually cluttered after cooking.

Anyway, this is from last week when I had supermarket tortellini with a pumpkin and ricotta filling - what a mistake to make (again and again 🙄). To make them better I fried some bacon bits and added courgette cubes to those. That together with some dollops of crème fraîche made this dish OK. It looks fine but there is something about tortellini that makes them stick to my tongue like dry cardboard… I really should give up on them.

This was one of the first Indian style meals my son tried when he was little and it was an instant winner (I had left out all of the chilli 😅). My cookbook calls it a Lentil Curry but I think it really is a Dal as it contains lots of red split lentils. We always eat this with broccoli florets and hard-boiled eggs - and these days also with chilli powder or flakes.
