Egg quesadillas.

Whisk a few eggs with some salt and seasoning (e.g. cajun sauce, chili powder, or just plain pepper). On a hot cast iron pan, put the tortilla and spread the egg on it with a spoon. When the egg is not runny, flip it over and cook it for a few seconds. Flip it again, sprinkle a fatty melty cheese on the egg (e.g. asadero, Oaxaca, or in my case, poutine cheese curds). Fold and toast both sides of your quesadilla.

Not that it's empty, but having a CC licensed collection of recipes from all over the world is just awesome. And there are so many variates of food left to document. :blobfoxnomcroutons:
